  • 120 gr. Very fine whole wheat flour
  • 50 ml of water
  • 1 egg
  • 1 tablespoon of extra virgin olive oil
  • Sea salt

Stuffed:

  • 1 onion
  • 1 leek
  • 4 carrots
  • 200 gr of pumpkin
  • 3 tablespoons olive oil
  • Sea salt
  • Eggplant
  • 3 tablespoons ricotta cheese or cottage cheese
  • 2 tablespoons grated Parmesan cheese
  • Parsley
  • Whole grain crackers
  • Sesame seeds

PREPARATION:

The indicated ingredients are mixed to prepare the dough. It is worked with the hands until a smooth and elastic dough is obtained. We wrap it and let it rest in the fridge for about 30 min.

The onion is peeled and cut very finely, in addition to the aubergine, carrots and pumpkin. Everything is placed in a pan together with the olive oil and sea salt.

When the vegetables are well cooked, we remove them and let them cool. Then they are mixed with the two cheeses.

We stretch the dough on a surface dusted with flour until it is fine and we sprinkle the ground cookies and the already prepared filling, spreading it evenly.

Roll it up carefully not to break the dough and sprinkle the sesame seeds on top. We take the oven previously preheated to 180º.

INGREDIENTS:

  • 500 grams of pumpkin
  • Parmesan
  • 4 carrots

PREPARATION:

Peel the carrots, chop the pumpkin.
Place both to cook in a saucepan with water and salt until they are ready.
We crush and strain the carrots together with the pumpkin until we get a homogeneous mixture. Then we place the Parmesan cheese on top and ready to be enjoyed.
It can be seasoned with parsley or spices to taste.

This oriental recipe is very simple and offers us a tasty recipe that we can prepare in advance and reserve without problem.

INGREDIENTS:

  • 600 grams of carrots
  • 1 onion
  • 400 grams of chickpeas (precooked)
  • 1 tomato
  • 1 clove garlic
  • a teaspoon of curry
  • 1 cup of vegetable broth
  • a tablespoon of olive oil
  • a teaspoon of fresh coriander
  • 20 grams of raisins

PREPARATION:

We peel the vegetables and cut them into large pieces. Then we rinse and squirt the chickpeas.
Sauté the vegetables in a pot with olive oil and add the chickpeas, the vegetable broth, the curry along with 1 liter of water.
Let cook for 45 minutes and proceed to beat the ingredients until a homogeneous mixture is obtained. And we can already serve it accompanied by raisins and chopped cilantro to taste.
This recipe can be served hot or reserved in the refrigerator to eat cold.

  • 400 grams of cookies type “maría”
  • 1 pot of condensed milk
  • 1 glass of milk
  • 2 carrots, grated
  • (optional) raisins and almonds.

PREPARATION:

The preparation is simple, and it is ideal to do with children.
Break the cookies into pieces, add in a container with the glass of milk and then the condensed milk.
Beat everything until a paste is formed. Add the carrots and pour into molds. Bake in a preheated 180º oven until a toothpick comes out clean.

It can be eaten hot or cold, accompanied by a delicious ice cream or completing a rich breakfast.
