Strawberry gateau recipe

Are you a fan of strawberries? Would you like to innovate in the kitchen and prepare a cake for everyone to suck their fingers and ask you for a second helping? Are you looking for an idea for your birthday or that of someone in your family? This strawberry gateau recipe is perfect!

Ingredients:

For the cake:

  • 6 eggs
  • 200g sugar
  • 2 teaspoons of baking powder
  • 200 g of flour
  • 1 teaspoon vanilla extract

For the pastry cream:

  • 2 yolks
  • 2 tablespoons cornstarch
  • 4 tablespoons of sugar
  • 500 cc of milk
  • 50g butter

For the filling and topping:

  • 750 g strawberries
  • 100g sugar
  • 1 box of strawberry jelly
  • 500 cc of cream
  • 6 tablespoons icing sugar

For the syrup:

  • 125 cc of water
  • 100g sugar
  • 3 tablespoons of cognac, rum or brandy

preparation:

Syrup

We are going to start by preparing the syrup. For it:

  • First, put the water and sugar in a saucepan.
  • Then bring to a simmer and leave for 5 minutes once it comes to a boil.
  • Then, remove and add your chosen alcoholic beverage.
  • Then reserve.
  • Now, wash the strawberries. Take approximately 500 grams and cut them in half (keep the rest washed in the fridge).
  • Then add sugar to the strawberries and refrigerate for 3 hours.

The sponge cake

  • First, beat the eggs and sugar for about 15 minutes (until creamy and thick and light in color).
  • Later, add the vanilla essence.
  • Then, sift the flour with the baking powder and add little by little while stirring.
  • Then grease and flour a circular mold. Line with parchment paper and turn the oven to 180 ° C.
  • Next, pour the preparation on the tray and cook for half an hour (or until cooked: try inserting a toothpick or knife in the center. If it comes out dry and clean, it’s time to remove the cake from the oven).
  • Finally, let it cool a bit and it will come off just the edges of the pan. Reservation.

Pastry cream

  • First, in a saucepan, put the yolks and sugar.
  • Next, integrate these ingredients well.
  • Then add the cornstarch and milk while stirring.
  • Bring to a simmer and mix to thicken.
  • When it comes to a boil, cook 2 more minutes.
  • Then, remove and incorporate the butter.

Assemble the cake

  • First, cut the cake into four pieces to fill.
  • To do this, begin to cut the bottom layer and rest on a tray.
  • Then, brush with a little of the syrup (without reaching the edges).
  • Next, cover with the pastry cream and the macerated strawberries.
  • Then cut another layer and rest on the strawberries.
  • Repeat the previous step with the pastry cream and more strawberries.
  • Finally, do the same with the third layer.

The decoration

Now is the time to decorate your strawberry gateau.

  • First, beat the cream with the icing sugar so that it is very thick.
  • Then, pour into a piping bag with a curly pointer. Decorate the edge with long sticks. What you have left, keep it in the fridge.
  • Prepare the strawberry jelly following the directions on the package.  To do this, bring to a moderate heat until it boils. Then let it cool to clot.
  • Meanwhile, cut the remaining strawberries in half and arrange in the hole in the center of the cake.
  • Then, pour half of the gelatin and put it in the fridge. The rest of the gelatin is liquefied by approaching a flame from above. Pour over the center of the gateau and quickly cool to harden.
  • Finally, what you have left of the cream you can use to continue decorating.
