The best recipe for crab cakes

This recipe consists of three parts: the preparation of the croquettes themselves and then two sauces to bathe them. It is an elaboration designed for approximately 10 diners; as regards the sauces, it can be substituted for others, according to the tastes and preferences of the diner.

 Ingredients

  • 3 eggs (180 g).
  • 1 cup of ground bread (200 g).
  • 3 green chives (60 g).
  • Sunflower oil for frying.
  • 3 tablespoons of wheat flour (50 g).
  • The zest of 1 green lemon, grated (5 g).
  • 1 bag of crab meat or surimi (500 g).
  • 1 small red chili finely chopped (15 g).
  • 1/2 tablespoon of grated fresh ginger (5 g).
  • 1/4 cup of chopped fresh parsley (the flat leaf) (50 g).
  • 1 tablespoon of low sodium soy sauce (10 g).

Preparation

  1. Finely chop the parsley, chives and crab or surimi.
  2. Beat the eggs until you get a homogeneous mixture.
  3. Add the breadcrumbs, eggs, chives and parsley.
  4. In another bowl, mix the soy sauce, ginger, lemon peel, and chili and add to the mixture.
  5. Add the crab or surimi to the preparation.
  6. Knead and with your hands form discs of approximately 3 centimeters in diameter or the classic croquette shape. Sprinkle them with the wheat flour.
  7. Heat the oil in a frying pan and fry the croquettes over medium heat and turn them once. Remove them when they are golden brown and place on absorbent paper.

Ingredients

  • Cold water (10-15 ml).
  • 1 tablespoon of lemon juice (10 ml).
  • 1 tablespoon and a half of olive oil (15 g).
  • 3 tablespoons of chopped fresh coriander (30 g).
  • 1 tablespoon of low sodium soy sauce (10 g).
  • 3 tablespoons of sweet chili sauce (30 g).

Preparation

  1. Mix all the ingredients and reserve for about 10 minutes so that the flavors come together.

Tartar sauce recipe

The classic tartar sauce is an excellent accompaniment to these crab cakes; It is one of the most traditional sauces in the kitchen, well known for its intense flavor and can last up to five days in the fridge.

Ingredients

  • 1 medium egg (60 g).
  • ¼ teaspoon of salt (2 g).
  • 1 small sweet onion (20 g)
  • 4 capers in brine (10 g).
  • ½ tablespoon of mustard (5 g).
  • 1 teaspoon of dried dill (5 g).
  • 1 tablespoon of lemon juice (10 g).
  • 6 medium pickles in vinegar (40 g).
  • 1 tablespoon of apple cider vinegar (10 g).
  • 10 tablespoons of sunflower oil (100 mL).
  • 5 tablespoons of extra virgin olive oil (50 mL).
  • ½ tablespoon of dried onion powder (5 g).

Preparation

  1. Very finely chop the sweet onion and pickles. Crush the capers a little. Reserve.
  2. Make a homemade mayonnaise in the blender as follows: pour in the egg and olive oil and start beating. When the mixture begins to emulsify, increase the speed of the mixer. This is when the sunflower oil should be added in the form of a thin thread while continuing to beat. Continue until the desired thickness is achieved.
  3. Add to this mayonnaise the vinegar, sugar, lemon juice, onion, mustard and salt. Put the mixer back on and mix until you get a homogeneous mixture.
  4. Add the onion, the chopped pickles, the capers and the dill.
  5. Store in the refrigerator for a while before serving to allow the flavors to blend.
