2. No-Bake Peach Cheesecake Recipe

Unlike the previous recipe, in this case it is a cold cake that does not require cooking and is very simple to prepare. A perfect combination between the crunchy biscuit base and the creamy filling.

Ingredients needed for a removable mold of 20 centimeters in diameter

  • 250 grams of cheese to spread.
  • 1 glass of cream for cooking or whole milk.
  • 2 natural Greek yogurts.
  • 1 sachet of curd or 5 grams of powdered gelatin.
  • Sugar: 140 grams.
  • 50 grams of butter.
  • Raisins and nuts: 50 grams of each.
  • 4 peaches.
  • 175 grams of maria type cookies.

Step-by-step elaboration

  • Chop the cookies with a chopper until you get a sandy texture.
  • Then mix them with the butter at room temperature and also add the raisins and walnuts. Combine all the ingredients well to prepare the base of the cake.
  • First, spread the cookie dough well so that it covers the entire base of the mold and then squeeze a little with your fingertips to make it firm. When it is ready, it is left to rest in the fridge.
  • To prepare the filling, you have to dilute the curd in a little milk or the gelatin in a little water. However, it is best to follow the manufacturer’s instructions to make sure it is done well.
  • On the other hand, mix the cheese with the yogurts and pour into a saucepan with 100 grams of sugar and the milk or cream.
  • Stir with a few rods so that everything is integrated and heat the whole with the curd or gelatin. As soon as it starts to boil, it must be removed from the heat.
  • Take the mold out of the fridge and pour the yogurt and milk mixture on top of the biscuit base. Let stand at room temperature and once warm, place in the refrigerator. Leave it there for a minimum of 3 hours, as the most important thing is that it sets and remains firm.
  • Wash and peel the peaches and dice.
  • Put a saucepan on the fire and add half a glass of water with the remaining 40 grams of sugar. Cook for 4 minutes and, after this time, add the peach into pieces. Confit for 2 more minutes and let cool.
  • Take the cake out of the fridge and decorate the surface with the fruit. Unmold just before serving.

Variant of the cold peach and cheese tart

In the base of this peach and cheese cake you can add other nuts to taste. You can try it with hazelnuts, pistachios, almonds, and even mix in crunchy breakfast cereals.

In addition, you can also add a larger piece of peach inside the filling, although this way the texture will not be so uniform and smooth.

Peach tart is not a substitute for fruit consumption

The peach is a fruit that is harvested during the summer months. For this reason, the ideal time to cook peach tart is at this time of year. However, there is always the possibility of substituting it for other fruits, such as apples, pears or apricots.

Likewise, it can also be prepared with peaches in syrup that are found in stores throughout the year. But although it seems that both maintain the same amount of some nutrients, it is always preferable to opt for fresh fruit and avoid added sugar.

Both preparations are a good dessert for a birthday or some special celebration and can be eaten from time to time in moderation. Although the cakes with fruits do not replace the servings recommended by the experts.
