Mini Focaccias

Mini focaccia recipe with olive and spices

Ingredients:

  • 350 grams of flour
  • 1 pinch of salt
  • 1 cup of water
  • 3 tablespoons olive oil
  • 15 grams of baker’s yeast
  • 100 grams of olives
  • ½ onion
  • 1 tomato
  • Thyme, parsley, basil, oregano and pepper

Focaccia

  • First of all, in a bowl, place the sifted flour, salt and yeast. Add the spices and stir well. 
  • Pour in the oil and 250 ml of warm water. Using your hands, blend to form a dough (it will take about 10 minutes).  Cover with plastic wrap or a clean, dry cloth and let it rest for an hour and a half.
  • Meanwhile, you can cut the olives in half (removing the core), the onion in julienne and the tomato in thin slices.
  • After the dough’s resting time,  knead again and divide into 4 parts. Shape them into a ball and put on a baking tray previously greased with a few drops of oil.
  • Make holes with your finger in the surface of each bread and sprinkle the onion, olives and tomato on top. Drizzle with olive oil and salt and pepper.
  • Turn the oven to 190 ° C. Let the breads ferment on the counter for an additional 30 minutes (covered).
  • Lastly, bake 25 minutes or until golden brown. Serve hot Be careful not to burn your fingers!

  • Tips: You can sprinkle on some grated mozzarella or Parmesan cheese if you’re eating the hot focaccias. On the other hand, if your idea is to eat them cold, opt for fresher ingredients such as arugula or tomatoes (you can add them when you take the bread out of the oven).

Another version of the mini focaccia recipe

Some indicate that this dish was an invention of the Greeks, others that of the Etruscans. And of course, the Italians popularized it. However, regardless of its true origins, the truth is that it is very tasty and everyone can eat it at home.

Ingredients:

  • 1 and ¼ cup of boiling water
  • 4 tablespoons minced fresh rosemary
  • A tablespoon of dehydrated garlic
  • 1 tablespoon of honey
  • A packet of fresh yeast
  • ¼ cup olive oil
  • 3 and ¼ cup flour
  • 1 pinch of salt
  • 1 egg yolk
  • 4 cloves of garlic

  • Wooden spoon
  • Film paper
  • Knife
  • Rectangular baking tray
  • Brush
  • Fork

  • First, in a container put the boiling water, half the rosemary, honey and dehydrated garlic. Let cool until it is around 40 ° C. Add the yeast and let it rest for 5 minutes.
  • Add the flour, a pinch of salt and 2 tablespoons of oil. Beat using the electric rods at first and then with your hands to form a smooth, elastic dough.
  • Wrap with plastic wrap and let it rise for 45 minutes.  In fact, the idea is to double in size. Grease a rectangular tray with cooking spray and place the dough. Stretch well and cover to grow back, about 20 minutes. Turn the oven on to 175 ° C.
  • Besides, mix 1 tablespoon of olive oil, a little water and the egg yolk. Reservation. Remove the plastic wrap from the dough and make several holes with your finger. Paint with the previous mixture. Sprinkle with the remaining rosemary and finely chopped garlic cloves.
  • Finally, take it to the oven and cook for about 25 minutes until you see the golden bread. Remove and let cool slightly on the counter. Then you can cut to the size you want.
