Green Chicken Enchiladas

  • 2 bone-in chicken breast halves
  • 2 cups of chicken broth
  • 1 clove garlic
  • 1 pinch of salt
  • ¼ onion
  • 12 corn tortillas
  • ¼ cup vegetable oil
  • 1 cup of fresh cheese
  • 500 grams of fresh tomatillos
  • 5 serrano peppers
  • 1 bunch of fresh coriander

Although it seems laborious, in just 45 minutes you will have this recipe ready.

Any occasion is a good time to enjoy delicious green chicken enchiladas.

  1. Pour the chicken broth into a saucepan along with the chopped onion, garlic clove, and salt. Next, add the chicken breast halves. Boil for 20 minutes.
  2. Remove the chicken and reserve the broth with the onion and garlic.
  3. Shred the chicken and reserve.
  4. In a saucepan, place the tomatoes and chiles and cover with water. Boil until well cooked.
  5. Drain and blend together with the onion and garlic that had remained from the broth.
  6. Gradually add the liquid from the broth until it has the consistency of puree.
  7. You have to cook this resulting sauce in a saucepan so that it boils and thickens.
  8. Pour some oil into the pan. When it is hot, go making the tortillas one at a time.
  9. Dip in the green sauce to soften them.
  10. Fill with the shredded chicken and pour in a little more sauce.
  11. Sprinkle with the chopped cilantro and queso fresco.

Chicken Green Enchiladas Recipe # 2

There are many variations for this dish originally from Mexico, it all depends on your imagination and what you have available in the fridge or cupboard. And not only that, you can also accompany it with the garnish that you like the most: white rice, refried beans or red rice. In short, any excuse is good to enjoy a delicious Mexican recipe.

There are many ways to prepare green chicken enchiladas

Ingredients (for 10 enchiladas):

  • 400 grams of chicken breast
  • 2 cloves of garlic
  • 1 onion
  • 10 tomatoes
  • 2 serrano peppers
  • 1 tablespoon of olive oil
  • 10 corn tortillas
  • 1 avocado
  • 2 sprigs of coriander
  • ¼ cup fresh cheese (ground)
  • ½ cup sour cream
  • 1 cup oil on canvas painting and
  • Salt and pepper to taste

How do you prepare these green chicken enchiladas?

Preparation of the filling:

  1. Clean the breasts and place them in a saucepan.
  2. Add 1 clove of minced garlic, half a minced onion and a pinch of salt. Cover all the ingredients with water.
  3. Cook over high heat until it comes to a boil. Leave 20 more minutes until the chicken is cooked through.

Preparation of the sauce:

  1. In another saucepan put the tomatoes, the serrano pepper and water to cover both.
  2. Cook over high heat and when it starts to boil, leave for 5 minutes.
  3. Strain and pour into a  blender.
  4. Also add ¼ onion, minced, 1 clove of minced garlic, and a little salt.
  5. Blend well and reserve.
  6. In a saucepan over low heat, pour a tablespoon of olive oil.
  7. Add the green sauce from the blender and rectify with more salt if necessary.
  8. When it starts to boil cook 4 minutes before turning off the heat.

Plating and presentation:

  1. Now is the time to heat the tortillas, with a little vegetable oil in a pan.
  2. When they’re all done, set aside a few minutes.
  3. Cut the chicken into small pieces and fill each of the tortillas.
  4. Cut the avocado into strips and add the remaining onion and chopped cilantro.
  5. Next, pour over the chicken and the tortillas: the sour cream, avocado, onion, cilantro and ground fresh cheese.
  6. Finally, pour the warm green sauce (another interesting option is to dip the tortillas in the sauce after heating them and before filling them with the chicken and other ingredients). If you want, you can heat in the oven for three minutes so that the cheese melts.
