Two Recipes To Prepare A Passion Fruit Dessert

Passion fruit dessert with cookies

The passion fruit dessert with cookies is an ideal option to enjoy as a snack or on a special occasion. You can even enjoy it after a meal. However, remember to eat small portions so you don’t overdo the calories. 

Ingredients

  • 1/2 envelope of unflavored gelatin
  • 1/2 cup of passion fruit juice (125 ml)
  • 1 package of Maria cookies (250 g)
  • Can of condensed milk (200 g)
  • 1 jar of heavy cream (150 g)
  • 1/4 cup of whole milk (60 g)
  • 1 large passion fruit (60 g)
  • 1 tablespoon of sugar (10 g)
  • 1/2 tablespoon of cornstarch (5 g)
  • 1/2 stick of cinnamon (2 g)

Passion fruit cookie recipe.

Preparation

  • First, we will place the squeezed juice of the passion fruit, the condensed milk, the heavy cream and the whole milk in the blender.
  • Then, we will beat the mixture until it becomes a homogeneous cream.
  • Afterwards, we will hydrate the gelatin with about 60 ml of hot water. Once the gelling agent is ready, we add it to the cream and beat it again so that it integrates well.
  • On the other hand, we place the cookies at the base of a wide mold, so that the entire bottom is well covered.
  • Next, we add the passion fruit cream over the cookies, distribute it evenly and put the mold in the fridge for an hour.
  • While it cools, we will prepare a passion fruit sauce to add to the dessert.
  • To do this, we cook the squeezed remains of the passion fruit pulp with the sugar, water, and cornstarch, and stir so that the ingredients dissolve well.

With this sauce we get the most out of the passion fruit. We can add cinnamon to flavor and decorate. To finish the recipe, we take the mold out of the fridge and serve the passion fruit dessert along with the sauce.

Chocolate brownie with passion fruit and banana sorbet

Beet chocolate brownies.

This delicious brownie combines the intense flavor of chocolate with the freshness of passion fruit. Although it is a bit more complicated to perform, you can show off at group lunches or dinners.

Ingredients

  • 1/4 of banana (20 g)
  • 10 ml of aged rum
  • 1 jar of cream (145 g)
  • 1 cup of sugar (200 g)
  • 2 medium eggs (120 g)
  • 5 tablespoons of syrup (45 g)
  • 1 teaspoon of glucose (5 g)
  • Passion fruit pulp (100 g)
  • 1 stick and 1/4 of butter (125 g)
  • 1/2 cup of almond flour (60 g)
  • 1 large tablet of dark chocolate (110 g)

Brownie Preparation

  • To start, we melt 70 grams of chocolate and all the butter.
  • Besides, we beat the eggs with 150 grams of sugar and the almond flour. Then we add it little by little to the previous melted mixture.
  • Once we get a homogeneous dough, we place it in a mold and bake it at 200 ºC for 15 minutes.

Sorbet Preparation

  • On the other hand, we will prepare the passion fruit sorbet.
  • We simply have to boil the pulp of the fruit with the syrup and glucose.
  • After the ingredients have been mixed well, we remove them and let them cool in the air.

Banana toffee preparation

  • To prepare the banana toffee, we heat 25 grams of sugar in a pan until it turns into caramel.
  • Then we add the banana and flambé it with the rum.
  • Finally, we add 45 grams of cream and mix it well before crushing and straining it.

Preparation of the creamy chocolate

  • To finish making this passion fruit dessert we will cook the creamy chocolate. We are going to start by making a crème anglaise, mixing the egg yolks with the remaining sugar.
  • On this mixture, we add the 100 grams of cream that we have left and we stir it well until we get a liquid cream, with a texture similar to that of a flan.
  • Then we heat the mixture over very low heat until it thickens a little, at which point we will add the rest of the chocolate.
  • Once it melts, we remove it from the heat and let it rest for about 12 hours.

As for the presentation, once the three parts of this passion fruit dessert are ready, we can place the brownie at the base of the plate, with the rest of the elements on it. Thus, the result will be a dessert with a very interesting mix of flavors that will surely appeal to all diners.
